I’m on a bit of a muffin kick right now! My latest muffins were inspired by Jessica Seinfeld’s Peanut Butter Muffin’s. These are some of the changes I’ve made…cut the sugar by half, substituted the egg with plain yogurt, changed the puree from cauliflower to prunes and tossed in a few chocolate chips. The result is a perfectly sweetened, super moist muffin!

Ingredients:
1/2 cup natural peanut butter
1/2 cup pureed prunes (1 small jar of baby food)
1/4 cup brown sugar
1/4 cup agave nectar*
1/2 cup all natural plain yogurt
1 ripe banana mashed
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 cup whole wheat or spelt flour
1/4 cup chocolate chips

Method:
Preheat oven to 350F
In stand mixer** combine peanut butter, prunes, sugar, agave, and yogurt. Mix well.
Add banana, and continue to mix.
In a separate bowl mix baking powder, baking soda, salt, and flour.
Add dry ingredients to wet, and mix until just combined.
With a wooden spoon stir in chocolate chips.
Using an ice cream scoop*** drop batter into paper lined muffin cups.
Bake for 20-22 minutes or until toothpick inserted comes out clean.

* can be substituted for brown sugar
** if you don’t have a stand mixer here are some options…
1) use a large bowl with an electric hand mixer
2) kick it old school with a large bowl with a wooden spoon. (it will just take a little longer)
***using an ice cream scoop helps to evenly distribute the batter amoung the muffin cups, resulting in muffins that are uniform in size.
